hmmm that all is very interesting indeed... so next question then, I probably need to move the current accounts into their own thing... guessing it's just a start from scratch in their account? Or can an account be migrated so the history remains?

You can unlink/relink accounts - I would go with this route first because history data is good to have.
If you're managing Adwords on your client's behalf, set yourself up with an MCC account (so that you can access multiple Adwords accounts with a single login). With GA, instead of creating extra profiles under your GA account to track your clients' sites (which then can only be linked to YOUR Adwords), create a GA account for your client (which they can link to their own Adwords account, and you link their Adwords into your MCC), then add yourself as a user of the client's GA account (use the same email as your personal/company GA logins). You should now see your client's GA in your GA. The crap I have to go through to separate a client account from their previous provider's because everything is under the provider profile instead of client's.
