Hi Steve,
I use Zend Framework which is one of the best for PHP development and they have tonnes of great classes for this kind of stuff.
you can also use Zend classes on their own without the whole framework if you just want something specific.

That page explains how to read email from pop3 and imap using zend framework which is awesome!
